Matcha Pancakes


Well if this doesn’t make you wake up happier I don’t know what will.


  • 1 egg
  • 1/3 cup milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons sugar
  • vanilla extract
  • 1/2 cup flour
  • 1 tablespoon matcha powder
  • 1 1/2 teaspoons baking powder
  • pinch of salt


Whisk together the egg, sugar, olive oil, milk and vanilla extract. Add all the dry ingredients and mix (don’t overdo it). Heat a frying pan on medium heat and pour about 2 tablespoons of batter each time, wait for bubbles to form, then turn and leave for an additional minute or two. Enjoy with dark chocolate or whatever you fancy!
