Hazelnut Dark Chocolate Cookie Sandwiches


No sugar, no eggs, no guilt 😀

These cookies are a great addition to any chocolate breakfast lovers menu (not that I have any second thoughts devouring them in between meals), are pretty healthy and super easy.

Soft, chewy and rrrreally chocolatey. In one word mouthwatering. Try them yourself!

For the cookies:

1 1/2 cup oat flour (or buckwheat)

3/4 cup ground hazelnuts

1/2 cup honey

1/4 cup vegetable oil

a pinch of salt

For the filling: 

150 gr dark chocolate

2 tablespoons almond butter

50 ml honey

Preheat oven to 180 C. In a bowl mix together flour, hazelnut meal, honey, salt and oil. Roll the mixture into balls and flatten slightly. Bake for approximately 15 min and let cool.

For the filling (which you can eat right there, act with caution!) mix the melted chocolate with the honey and almond butter until smooth.
